Hayashi Winery, Winery in Shiojiri, Japan
Hayashi Winery is a wine producer in the Kikyogahara area that operates vineyards across multiple elevations, blending fruit from its own property with grapes from partner growers. The vineyards benefit from the region's topography and proximity to the Chikuma River.
The estate started in 1911 as a fruit tree farm and gradually shifted toward wine production. The introduction of specific grape varieties in the 1970s marked a turning point in the region's viticultural development.
The winery combines Japanese agricultural traditions with international winemaking techniques, employing oenologists who studied viticulture methods worldwide.
Visitors can arrange tasting sessions and try a range of wines, with advance booking being advisable to ensure a smooth visit. You can also walk through the vineyards to see how grapes are grown at different elevations.
A section of the property sits at an elevation once thought too high for grape growing, yet it now produces wines with distinctive qualities that set them apart. This surprising development reflects how experimentation can challenge conventional wisdom about what the land can yield.
